Along with crisp mornings and pleasingly structured coats, truffles are my favourite thing about the winter months. Sydney was crying out for a fresh truffle providore, so there was a collective waving of hands in the air among fellow truffle-lovers when Madame Truffles opened up a seasonal pop-up out the back of Pasta Emilia on Riley Street in Surry Hills. Sourced from the best truffieres in WA, NSW, Victoria and Tasmania, the Madame’s truffles are conveniently sold by the gram, so you can buy enough for a meal for two or a feast for twenty. Also on offer are a range of truffle-centric products – ice cream, honey, pasta, salt, and popcorn to name a few, all made with highest-quality real-deal truffles (nary a synthetic oil, essence or extract to be found).
On my visit, the lovely Tasha talked me through the range of freshly harvested truffles on offer that week, and after a sniffing my way through the funky West Australian and foresty Tasmanian varieties, I was sold on the distinctively smokey truffles from Braidwood in NSW (which I put to good use later than night in an incredible riostto). My truffles were wrapped in tissue and popped into a jar accompanied by card card explaining a little about its origins, and also the name of the dog who found it (bless!)
